My chilled Friday… and Saturday and Sunday!

I have been eating out way too much lately – as much as I love it, sometimes it just gets too much and becomes a novelty which is when I know that a home cooked meal is in order which is exactly what we did on Friday night.

I got a delicious salad off my lovely sisters blog and adapted it slightly as I didn’t have all the ingredients:

Chickpea and Ricotta Salad

· 2 cans chickpea’s

· 5 small red peppers

· 250g Ricotta

· Basil

· Cherry tomatoes

· 1 can butter beans

· S&P for flavour

· Olive oil

· Wholegrain mustard

Chopped this all up and put in a salad bowl – mix a generous dose of olive oil and mustard for dressing. Could it be easier!!!

I served this with a delicious chicken from the good-old Woolworths Rotisserie, cant go wrong with that.

Went to Sidewalk Café in Vredehoek on Saturday night with a couple that we love seeing and it was as good as ever! I’m never let down there. Spoilt myself to a small portion of calamari with a beetroot, strawberry, macadamia nut and goats cheese salad with Rocket and watercress – I want one now!!!

A trip to Thailand is being thrown around of late and is getting me far too excited… just thought I’d let you know 🙂 Have a good week!
